I was fitted at the titleist place near st. Ives for my vokeys last year.
I don't think they put much credence into choosing the right shaft as they don't have interchangeable ones in their demos. He just said with go with standard or for the sake of a fiver go with the same as my irons.
Where they do put the emphasis on fitting is in getting the right lofts for yardage gaps, and bounce/grind for your style of play. As well as hitting from the bay on a launch monitor you get the chance to try different grinds on a grass short game area.
I wouldn't call getting fitted for wedges the be all and end all, but it's worth doing imo just for the potential small edge it might give, and also for peace of mind that you have the right clubs.
